These products are the industry standard for propery cleaning and santization of glassware by following 4-step system:
1. WASH - Wash glasses, fill sink with 3 gallons of water. Add contents of one BarMaster Glass Cleaner.
2. RINSE - Rinse with clean water. Keep water clear. Change rinse water often.
3. SANITIZE - Sanitize glasses by immersion. Add the contents of one pouch of ST-761 Sink Sanitizer per 10 gallons of water. Do not rinse.
4. AIR DRY - Drain until dry. DO NOT TOWEL DRY.

Specialized sanitizer for:

  * Utensils, dishes, and glasses in the final sanitizing rinse
  * Food processing equipment including dairy (soft serve machines) and brewery equipment
  * Table tops, counters, or any hard (nonporous) surface

Sink Sanitizer is recommended for use on hard (nonporous) surfaces, on dishes, glasses or food processing equipment or utensils, including dairy (soft serve machines) and brewery equipment and utensils.

Prepare a sanitizing solution by dissolving 1 oz. of Sink Sanitizer per 10 gal. water. This gives a solution containing 100 ppm available chlorine. Clean and rinse item or surface prior to sanitizing. Then place dishes, glasses, equipment or utensils in the solution or spread it over the surface to be sanitized. Let stand 2 to 5 minutes and allow to air dry.

Hot Sauce Tips: Here are a few tips for making hot sauce that we have compiled from our most FAQs:

Work in a sterile environment. Sterilize/sanitize all equipment and container parts that you plan to use as well as counters or workspace (See our Stearns Combo Pack available above)
Do not use fresh tomatoes or other produce that demands canning for preservation. Canned tomato sauce or ketchup are ok since the are already processed.
Wash all produce you plan to use and use fresh "boxed" ingredients for best flavor.
You need a pH of no more the 4 for un-refrigerated shelf life
Xanthan Gum gives body and sheen to a hot sauce and reduces separation. There is not definitive measure to use, that will depend on the consistency of your your hot sauce and your desired result. Keep the amount minimal, starting with a very small amount and add to simmering hot sauce as needed. Download our Xanthan Gum Notes
Bring sauce to a solid boil while cooking.
Bottle sauce at at least 192 F, it does not have be boiling at this point.
Fit reducers (if using) and cap bottles tightly. Let cool and retighten caps.
Some people will hot bath after bottling. Some people turn bottles upside down to help to seal. When sauce is properly bottles, I don't believe that either of the steps are necessary, just optional. Sometimes I do, sometimes I don't and have had no ill effects.
The shrink bands are for cosmetics and tamper resistance, they do nothing to seal the bottle and cap.
